Ginger soup is a delicious and warming soup that can be enjoyed during cold weather or when you need a comforting meal. Here is a simple recipe for ginger soup.


  • 1 large onion, diced
  • 2-3 cloves of garlic, minced
  • 2-3 inches of fresh ginger, peeled and grated
  • 4 cups of vegetable or chicken broth
  • 1 cup of water
  • 1-2 tablespoons of olive oil or butter
  • Salt and pepper to taste


  1. In a large pot, heat the olive oil or butter over medium-high heat. Add the onions and garlic, and sauté until they are soft and translucent.
  2. Add the grated ginger to the pot and stir well. Cook for a minute or two until fragrant.
  3. Pour in the broth and water and bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes.
  5. Once the soup has cooked, remove it from the heat and let it cool for a few minutes.
  6. Using an immersion blender, puree the soup until it is smooth and creamy.
  7. Season with salt and pepper to taste.
